ดังที่ ดร.อานนท์ เอื้อตระกูล ได้ประกาศเชิญชวนให้หันมาทำการเพาะเห้ดในขอนไม้กันใหม่ เพราะอดีตเคยมีการเพาะเห็ดในขอนไม้กันอย่างกว้างขวาง แต่ก็เลิกรากันไป จนแทบจะไม่มีใครเพาะเห้ดในขอนไม้กันอีกเลย ที่เป็นดังนี้ ก็เพราะว่า ผลผลิตที่ได้ไม่แน่นอน และต่ำ ไม่คุ้มต่อการลงทุน สาเหตุที่เป็นเช่นนั้น ก็เพราะว่า เราไม่เข้าใจกรรมวิธีการเพาะเห็ดในขอนไม้อย่างถูกวิธี พอเพาะและมีดอกเห็ดเกิดขึ้นแล้ว ก็มักจะหลงดีใจ ภูมิใจ แล้วก็ปล่อยปละละเลย โดยอาจจะรู้เท่าไม่ถึงการณ์ ไม่มีการพักไม้ ไม่มีการกระตุ้นให้เห็ดเกิดดอกอย่างถูกวิธี จึงไม่ได้ผล ดังนั้น เพื่อเป็นการยืนยันว่า การเพาะเห้ดในขอนไม้ หากดำเนินการอย่างถูกวิธี ก็ยังเป็นอีกวิธีหนึ่ง ที่สามารถทำเป็นธุรกิจได้ ยิ่งในสภาวะปัจจุบัน ที่ปัจจัยการผลิตอย่างอื่นล้วนแล้วถีบตัวสูงขึ้น การเพาะเห็ดในขอนไม้จึงมีโอกาสและมีความเป็นไปได้สูง ดร.อานนท์ จึงได้มอบหมายให้ อ.เยาวนุช เอื้อตระกูล และดิฉัน(ผึ้ง, อรนุช เอื้อตระกูล) ทำการรื้อฟื้นงานวิจัย และทำการเพาะเห็ดเห้ดในขอนไม้ในเชิงธุรกิจอย่างจริงจังอีกครั้งหนึ่ง ด้วยการเพาะเห้ดหลายชนิดในขอนไม้หลายสิบตัน หรือหากนับเป็นจำนวนท่อนไม้หลายพันท่อน

Growing oyster mushroom in the logs or billet could be one of the most easiest method which being practised in many countries in Asia for centuries. In Thailand too, this technology being introduced over 50 years ago by Taiwanese expert to grow ear mushroom(Auricularia auricula and Auricularia polytricha) but till date very few farmer are using this technology due to low and uncertain productivity. In fact, if one could follow the growing pattern correctly, yield and mushroom quality by using this method is still viable and profitable. I m glad you brought up the log method for pleurotus.
For us here in my part of Texas, various grasses are more in use. We have a lot of good soil for farming, but not nearly the rainfall you have in Thailand, plus our trees are somewhat limited for mushroom purposes. We average around 21-25" per year of rainfall. But that is enough to grow various native and sudan grasses, corn and sorghum. Although I know the oyster species can grow on various substrates, I have used sawdust and straw for the Pleurotus eryngii and straw for the others. Even though the biological efficiencies may be decreased some, for the cost, they produce well.
And that is something I have seen time and time again in research studies, most researchers do not include "real world" scenarios in the production of any mushrooms. They seek to expand knowledge or test their hypothesis only. We need more research that actually targets biological efficiency, for instance, based on total costs of target substrates, because everything costs us something, even if it is our time. So it would be good to have analyses based on the whole process of mushroom farming from beginning to end including different substrates to some degree. Therefore a person wishing to get an idea of what it would actually cost to produce a certain species on a certain substrate would have a better idea, than just saying "I want to grow mushrooms" and starting out with his brain empty of that very important knowledge. Most people simply have no idea the time, materials, complexity and costs involved in producing one single species to fruit--
